This coffee is produced by 850 small farmers in the town of Shakisso, located in the larger Guji zone. It is a lot of mixed heirloom varieties, which are handpicked, fermented and sun dried on raised beds with simulated shade netting for 21 days at the Hadeso-Testi Wash Station. The coffee cherries are carefully managed while immersed in the fermentation tanks, taking great care to remove lower quality cherries prior to their placement on raised drying beds. The Guji Zone of Southern Ethiopia borders the lush zones of Sidama and West Arsi to the north, the Bale Zone to the east, and the famous Gedeo Zone to the West. Given their closeness, Guji and Gedeo share many crossover characteristics in coffee processing and production, resulting in similar bright, sparkly coffees with heavy floral notes and an overall delicacy.
